BLT Dip

BLT Dip Version A

1 c. mayonnaise
1 c. sour cream
1 lb. bacon
2 med. tomatoes

Cook bacon until crispy, drain grease, dice tomatoes, combine sour cream, mayonnaise, bacon and tomatoes, mix well. Serve with toast.

BLT Dip Version B

1 pound bacon cooked crisp and crumbled
1 cup mayonnaise
1 cup sour cream
Iceberg lettuce shredded
2 large vine-ripe tomatoes diced
Sea salt bagel chips

Combine the mayonnaise and sour cream in a small bowl with a snap-on lid. When well mixed refrigerate until serving time. When ready to serve combine ingredients in a large serving bowl by placing one layer of the mayonnaise mixture then a layer of lettuce tomatoes and bacon. Repeat layering as desired. Serve with bagel chips.

BLT Dip Version C

1 envelope lipton recipe secrets
1 (8 oz. container) sour cream
1 c mayo
1 tomato
1/2 cup cooked bacon
shredded lettuce for garnish

BLT Dip Version D

1 (16 ounce) container Sour Cream
1/2 teaspoon onion powder
6 slices Fully Cooked Bacon
1/2 cup shredded Cheddar cheese
2 tomatoes, chopped, divided
1 cup shredded lettuce
Wheat Thins Original Crackers

Mix sour cream and onion powder; spread onto bottom of 9-inch pie plate.

Heat bacon as directed on package; cut into small pieces. Sprinkle over sour cream mixture. Top with cheese, 3/4 cup tomatoes and lettuce; sprinkle with remaining tomatoes.

Serve with Wheat Thins crackers.

BLT Salad

Make ahead of time for best flavor.

1 (16 ounce) package medium seashell pasta
1 pound sliced bacon
1-1/2 cups light Ranch-style salad dressing
1 small onion, chopped
2 tomatoes, chopped

Bring a large pot of lightly salted water to a boil. Add the pasta, and cook until tender, about 8 minutes. Drain, and rinse under cold water to cool.

Meanwhile, cook the bacon in a large deep skillet over medium-high heat until browned and crisp. Remove from the pan and drain on paper towels.

In a large bowl, stir together the Ranch dressing, onion, and tomatoes. Mix in the cooled pasta. The pasta will absorb some of the dressing, so don’t worry if it seems like too much. Refrigerate for several hours or overnight. Crumble bacon over the top just before serving.

BLT Wraps

1 pound thick sliced bacon, cut into 1 inch pieces
4 (12 inch) flour tortillas
1 cup shredded Cheddar cheese
1/2 head iceberg lettuce, shredded
1 tomato, diced

Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside.

Place 1 tortilla on a microwave-safe plate. Sprinkle tortilla with 1/4 cup cheese. Cook in microwave 1 to 2 minutes, or until cheese is melted. Immediately top with 1/4 of the bacon, lettuce, and tomato. Fold sides of tortilla over, then roll up. Repeat with remaining ingredients. Cut each wrap in half before serving.

Blueberry Muffins

Double this recipe and add extra blueberries then fill muffin cups to top edge for extra large results…

1-1/2 C. Flour
3/4 C. Sugar
1/2 tsp. Salt
2 tsp. Baking Powder
1/3 C. Vegetable Oil
1 Egg
1/3 C. Milk
1 C. fresh blueberries

Topping:
1/2 C Sugar
1/3 C Flour
1/4 C butter, cubed
1-1/2 tsp. cinnamon

Directions:
1) Preheat Oven to 400° F. Grease muffin tin or use liners.
2) Combine 1-1/2 cups flour, 3/4 cup sugar, salt and baking powder.
3) Place vegetable oil into a 1 cup measuring cup, add the egg and enough milk to fill the cup. Mix this with the flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.

To Make Crumb Topping:
Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.

Bake for 20 to 25 minutes or until done.

Boiled Chicken (for use in recipes)

Place whole chicken in a dutch oven and add water until only 1″ of chicken still showing. Add a can of chicken broth, chicken broth cube and stir gently. Add onion , clove, garlic, 1 or 2 celery if you have them. Bring to a boil and then simmer 3-4 hours.

Put in fridge overnight to cool. Skim fat off, reheat & let cool, strain in a colander, keep broth in bowl below colander.

With your fingers or a fork, remove as much meat as possible from the chicken frame and use in other recipes.

Jimmy Dean Breakfast Casserole

1 (16 oz.) Pkg. Regular flavor Jimmy Dean Pork Sausage
10 eggs, lightly beaten
3 c. milk
2 tsp. dry mustard
1 tsp. salt
6 c. cubed bread
2 c. shredded sharp Cheddar Cheese
1/2 tsp. black pepper
1/2 c. sliced mushrooms
1 med. tomato, seeded & chopped
1/2 c. thin-sliced green onion.

Preheat oven to 325° F. In large skillet, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink. In large mixing bowl, combine eggs, milk, mustard and salt; stir well.

Distribute half the bread evenly in a buttered 9 x 13 x 2 baking dish. Sprinkle with half the pepper, half the cheese, half the sausage and half of each optional ingredient. Repeat layering using remaining bread, pepper, cheese, sausage and optional ingredients. Pour egg mixture evenly over casserole.

Bake uncovered for 55-60 minutes, or until eggs are set. Tent with foil if top begins to brown too quickly.

May be assembled ahead and refrigerated up to 12 hours before baking.

Broccoli Salad

5 c. Fresh Cut Up Broccoli (About 4 heads)
2 Chopped Green Onions
1 Pkg. Bacon, fried and crumbled
1/2 c. Raisins
1/2 c. Sunflower Seeds
8 oz. sliced mushrooms
1/2 c. Sugar
2 T White Vinegar
1 c. Mayonnaise

Except for the Sunflower Seeds and Bacon, mix dressing and all ingredients together and let marinate overnight.

Serves 15-20

Note: If you’re feeling particularly lazy you can substitute real bacon bits for the bacon, but it is a waste of time because they just don’t have the same flavor.

Bruschetta

1/4 c. olive oil
3 large cloves garlic, minced
1 loaf (1 lb.) French bread, cut into 24 slices
24 thin slices Mozzarella Cheese
6 plum tomatoes, chopped
2 Tbsp. chopped fresh oregano
PREHEAT broiler. Mix oil and garlic. Brush both sides of bread slices lightly with oil mixture. Place on baking sheet. Broil 1 to 2 minutes on each side or until lightly toasted on both sides.

Cover each toast slice with 1 cheese slice; top evenly with tomatoes.

Broil about 4 inches from heat 1 to 2 minutes or until cheese is melted. Sprinkle with oregano. Serve warm.

Makes: 2 dozen slices, or 24 servings, 1 slice each

Note: Valentino’s makes this with the tomatoes and green olives underneath shredded mozarrella cheese and it’s awesome!

Artichoke Dip

1 (14 oz.) Can Artichoke Hearts, drained & chopped.
1 C Helman’s Mayonnaise
1 C Grated Parmesan Cheese
1 (4 oz.) Can diced green chiles

Preheat Oven to 350° F.

Combine the artichoke hearts, mayonnaise & chiles. Mix well & pour into a 2 quart casserole dish.

Bake for 20-25 min. or until lightly browned. Garnish with chopped green onions and chopped tomato if desired.

Steamed Asparagus with Hollandaise Sauce

1 large bunch of asparagus
4 egg yolks
2 t fresh lemon juice
1 T water
1 T Dijon mustard
1/2 lb. butter, melted and warm

Bring a pot of salted water to a boil. Trim the asparagus. Place the asparagus in the water and blanch for about 4 to 6 minutes. While the asparagus are blanching, prepare the sauce.

In a stainless steel bowl set over a pot of simmering water over medium heat, whisk the egg yolks with the lemon juice, water, and mustard together. Season with salt and cayenne. Whisk the mixture until pale yellow and slightly thick. Be careful not to let the bowl touch the water. Remove the bowl from the pot and whisking vigorously, add the butter, 1 teaspoon at a time, until all is incorporated.

Remove the asparagus from the water and season with salt and pepper. Place the asparagus on a platter and spoon the Hollandaise sauce over the top.

Serves 4
